SADRŽAJ NITRATA I AKTIVNOST NITRAT-REDUKTAZE U POVRĆU UZETOM SA „TRŽNICE“ U BANJOJ LUCI I PROCJENE RIZIKA

Apstrakt

Visok sadržaj nitrata i nitrita u povrću može imati toksične i kancerogene efekte na ljudski organizam, te je neophodno praćenje kako bi se primijenile odgovarajuće zaštitne mjere. Cilj istraživanja u ovom radu bio je određivanje sadržaja nitrata i praćenje aktivnosti nitrat-reduktaze u povrću (blitva, mrkva, peršun, kupus) uzetom sa različitih štandova gradske tržnice u Banjoj Luci. Prosječna koncentracija nitrata u uzorcima povrća kretala se od 1 do 650 mgkg-1, pri čemu su najveće vrijednosti dobijene u blitvi i kupusu, a najniže u korijenu peršuna. Aktivnost nitrat-reduktaze bila je povećana u blitvi, dok je najniža utvrđena u korijenu peršuna. Sadržaj nitrata u uzorcima povrća bio je u granicama koje su propisane od strane Svjetske zdravstvene organizacije, tako da ne postoji potencijalna opasnost po zdravlje ljudi.
